These are some time tested recipes for the weary biker. All have been thoroughly taste tested at our Loveland Gazebo test labs. Only Five Star recipes make the list so you can be confident of the quality! Most recipes go well with beer (especially Double Bastard Ale).

Connie's Craisin Oat Cookies 

Preheat oven to 350 degrees.  Place oven racks in top and bottom third of oven. Cream together the butter, sugar, spices, baking powder, baking soda, salt and vanilla.  Beat in the egg.  Add the oats, flour, fruit and nuts, and stir to combine. Drop the dough by heaping tablespoonfuls onto a lightly greased or parchment-lined baking sheet.  Bake in preheated oven for 7 minutes; reverse the pans on the racks, and bake for an additional 7-8 minutes, until cookies are beginning to brown around the edges, but are still soft in the center.  Remove from the oven and cool on a rack. Yield: about 4 dozen cookies

Connie's Peanut Butter Rice Krispie Squares

Bring sugar and corn syrup to a fast boil.  Remove from heat, and stir in peanut butter.  Stir in cereal. Spread in lightly buttered 9x13 pan or cookie sheet. Refrigerate.

Knock You Naked Brownies

1 box Duncan Hines German Chocolate Cake Mix
1 cup pecans -- chopped
1/3 cup evaporated milk
3/4 cup butter -- melted
1 bag caramel candy, peeled -- (14 oz.)
1/2 cup evaporated milk
1 cup semi-sweet chocolate chips


Place Reynolds nonstick aluminum foil into a 9x13 Pyrex baking dish.  (If the nonstick foil isn’t used, the brownies are terribly hard to get out of pan!)  Combine cake mix, nuts, 1/3 cup milk, and butter. Mix well. Press half of the mixture into the bottom of the Pyrex baking dish; bake at 350* for 8 min.  Let cool for about 15 minutes. Meanwhile, melt caramel candy in top of double boiler or microwave (quicker than double boiler) with 1/2 cup milk. When caramel mixture is well mixed and somewhat cooled, pour over baked mixture. 
Cover with chocolate chips. Dollop rest of chocolate dough on top of the chips.  Bake for 18-22 min. at 350 degrees.   Cool completely and refrigerate before slicing.

Lynn Penning's Great Beer Cheese Dip

Beat ingr. until smooth. Refrigerate overnight. It's that easy!!!

Lonnie Smith's Taco Salad

In a 9 X 9 pan...

Soften cream cheese and mix with taco sauce. (a potato masher works best)
Spread in bottom of pan.
Sprinkle a little cheese.
Sprinkle lettuce.
Sprinkle tomato.
Sprinkle remaining cheese.
Chill and eat with a 12-ounce bag of tortilla chips    
....   UMM GOOD!

Lonnie Smith's Turkey Wraps

Ingredients:
10 medium size soft tortillas
10 slices of ham or turkey
16 ounces cream cheese - softened
1/3 cup mayonnaise
3 tablespoons chopped green onions
2 tablespoons chopped black olives

Directions:
Combine cream cheese, mayo, onion and olives. Spread a thin layer of cream cheese mixture on top of each tortilla.
Arrange meat slice over the mixture. Tightly roll up each tortilla, individually wrap in plastic wrap. Refrigerate for 3 hours to overnight.
To serve, remove wrap and cut into 3/4 inch diagonal sections.

Tortilla Chips - When the Chips Are Down?

If you love tortilla chips but hate the fat, make your own! Just cut five flour tortillas (preferably whole wheat) into eighths to make 40 wedges. Arrange them on baking sheets, coat them with cooking spray, and sprinkle them with 1/2 teaspoon each of salt and chili powder. Bake at 350?F for about 10 minutes, or until crisp.

Healthy Pancakes

Substitute Oatmeal and low fat cottage cheese for pancake mix. Sounds weird but its actually kinda good and gets rid of those bad carbs (45g elim/pancake) Mix together in blender 1/2 cup oatmeal, 1/4 cup low fat cottage cheese, two eggs, a dash each of vanilla, cinnamon and nutmeg. Blend and cook like regular pancake mix. Makes 4 normal size pancakes.

Fred Stults's Awesome Pancakes

Ingredients 
Flour 2 Cups
Sugar 2 Tbsp.
Baking Powder 1 Tbsp.
Eggs 2
Cooking Oil 1/3 Cup
Milk 1 1/2 Cups

* Mix dry ingredients and set aside.
* In two separate bowls, separate the egg yolks and egg whites
* Beat egg whites until stiff
* Slightly beat egg yolks and add oil and milk. Beat until well mixed.
* Add egg, milk and oil mixture to dry ingredients and mix by hand. Beat slightly with mixer until just smooth.
* Mixture should be thick and creamy.
* Then "fold" the egg whites into the mixture until just blended. 


Our favorite variation is to drop 6-8 blueberries in the batter after the pancake is spooned onto the griddle or pan. Top with maple syrup and enjoy.
